Large food and sundry distributors, and warehouses were located there. They got their coffee beans, etc. from barges on the Mississippi River, Roasted the coffee beans, dried the fruit, etc. They packed it all in gunny sacks, barrels, etc. and sent retailing help, like signs, consumer size bags & boxes. Smaller grocers would buy the preground like "Kitchen Queen". Many had their own hand crank coffee grinders and would buy barrels and gunny sacks of roasted beans to grind to order and put into a fancy box or bag provided by the food processor. The same coffee would sell under different brands. Some consumers had their own smaller kitchen sized Coffee Bean Grinders and ground their own coffee beans fresh every morning. They were packaged it in smaller wholesale cartons and sent by train Out West, to Ma & Pa grocers and General Stores, for settlers and railroad towns in the expanding frontier.
